Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts OR 1 pre-cooked rotisserie chicken
  • 1 tbsp olive oil if pan-searing chicken
  • 1 tsp garlic powder if pan-searing chicken
  • 1 tsp onion powder if pan-searing chicken
  • ½ tsp paprika if pan-searing chicken
  • Salt and pepper to taste
  • ½ cup mayonnaise
  • 2 tbsp grated Parmesan cheese for dressing
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ tsp Worcestershire sauce
  • 4 sandwich rolls or bread of your choice
  • 4 cups chopped romaine lettuce
  • ½ cup grated Parmesan cheese for garnish
  • Optional: croutons
  • Optional: red pepper flakes

Instructions
 

  • If pan-searing chicken: Pound the chicken breasts to an even thickness (about 1/2 inch).
  • In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  • Rub the mixture all over the chicken breasts.
  • Heat a large skillet over medium-high heat.
  • Add the chicken breasts to the skillet and cook for about 5-7 minutes per side, or until cooked through and no longer pink inside. Let the chicken rest for a few minutes before slicing or shredding.
  • If using rotisserie chicken: Shred or dice the rotisserie chicken.
  • In a medium bowl, whisk together the mayonnaise, 2 tbsp Parmesan cheese, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce.
  • Season with salt and pepper to taste. Whisk until well combined. Taste and adjust seasonings as needed.
  • Lightly toast your sandwich rolls or bread.
  • In a large bowl, gently toss the chopped romaine lettuce with about half of the Caesar dressing.
  • Spread a thin layer of the remaining Caesar dressing on both halves of the toasted bread.
  • Place a generous amount of the cooked chicken on the bottom half of the bread.
  • Pile the dressed romaine lettuce on top of the chicken.
  • Sprinkle with extra Parmesan cheese and croutons, if desired.
  • Top with the other half of the bread.
  • Serve immediately.

Notes

To prevent the sandwich from getting soggy, make sure the chicken is cooled slightly before assembling. Don't overdress the lettuce. For a spicier dressing, add a pinch of red pepper flakes. Experiment with different types of bread like ciabatta or sourdough. Toasted almonds or pine nuts can add a delightful crunch. For a lighter option, use a whole wheat wrap instead of bread. The chicken can be prepared a day in advance and stored in the refrigerator.
