Irresistible Chicken Avocado Melt Sandwich

Ingredients
  

  • 1 boneless, skinless chicken breast 6-8 ounces
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • ¼ teaspoon salt for avocado spread
  • teaspoon red pepper flakes optional
  • 2 slices bread sourdough, whole wheat, or ciabatta
  • 2 slices cheese Monterey Jack, provolone, or cheddar
  • Optional toppings: sliced tomato, sprouts, hot sauce
  • Butter or cooking spray

Instructions
 

  • Heat the olive oil in a skillet over medium heat.
  • Season the chicken breast with salt, pepper, and garlic powder.
  • Cook the chicken for about 6-8 minutes per side, or until cooked through and no longer pink inside. A meat thermometer should read 165°F (74°C).
  • Remove the chicken from the skillet and let it rest for a few minutes before slicing or shredding.
  • In a small bowl, mash the avocado with a fork.
  • Stir in the lime juice, salt, and red pepper flakes (if using).
  • Mix well until smooth and creamy.
  • Spread the avocado mixture evenly on one slice of bread.
  • Top with the sliced or shredded chicken.
  • Add your desired toppings, such as sliced tomato or sprouts.
  • Place the cheese slices on top of the chicken.
  • Top with the other slice of bread.
  • Heat a clean skillet or griddle over medium-low heat.
  • Butter the outside of both bread slices (or spray with cooking spray).
  • Place the sandwich in the skillet and cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  • Carefully remove the sandwich from the skillet and let it cool slightly before slicing and serving.

Notes

For a spicy kick, add sriracha or jalapeños to the avocado spread. Try mixing feta cheese and olives for a Mediterranean flavor. Crispy bacon or pesto also make great additions. To prevent avocado browning, press plastic wrap onto the surface of the spread before refrigerating. Cook chicken and avocado spread can be stored separately in the refrigerator for up to 3-4 days and 1-2 days respectively.
