Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese, plus more for topping
  • 2 tablespoons chopped fresh parsley, optional
  • ½ cup melted butter
  • 1 teaspoon garlic powder
  • ¼ teaspoon dried Italian seasoning

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 12-cup bundt pan.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken cubes and season with garlic powder, salt, and pepper.
  • Cook until the chicken is cooked through and lightly browned, about 5-7 minutes.
  • Reduce the heat to low. Pour in the Alfredo sauce and stir to combine. Add 1/4 cup of Parmesan cheese and parsley (if using).
  • Simmer for 5 minutes, stirring occasionally, until heated through. Set aside to cool slightly.
  • Open the cans of biscuit dough and cut each biscuit into quarters.
  • In a large bowl, combine the melted butter, garlic powder, and Italian seasoning.
  • Add the biscuit pieces to the bowl and toss to coat evenly.
  • Place a layer of biscuit pieces in the bottom of the bundt pan. Top with a spoonful of the chicken Alfredo mixture.
  • Repeat layering until all the biscuit pieces and chicken Alfredo mixture are used, ending with a layer of biscuit pieces.
  • Bake for 30-35 minutes, or until the monkey bread is golden brown and cooked through.
  • Let the monkey bread cool in the pan for 5-10 minutes before inverting it onto a serving platter.
  • Sprinkle with extra Parmesan cheese, if desired. Serve warm.

Notes

To prevent the bottom of the monkey bread from getting sticky, make sure your bundt pan is well-greased or sprinkle a thin layer of breadcrumbs on the bottom of the pan before adding the biscuit pieces. If your Alfredo sauce seems a little thin, you can thicken it by simmering it over low heat for a few minutes longer, or adding a tablespoon of cream cheese or a little more Parmesan cheese. To prevent the edges from burning, tent the bundt pan with aluminum foil for the last 10-15 minutes of baking. For a spicy kick, add a pinch of red pepper flakes to the Alfredo sauce or diced jalapeños to the chicken. You can also add spinach, broccoli, mushrooms, or bell peppers to the chicken Alfredo mixture. For an even cheesier monkey bread, add a layer of shredded mozzarella cheese or a blend of Italian cheeses between the biscuit pieces and chicken Alfredo mixture.
