Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces elbow macaroni
  • Water, for boiling
  • 1 tablespoon olive oil optional
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the chopped onion and green bell pepper to the skillet and cook until softened, about 5-7 minutes.
  • Stir in the tomato sauce, cream of mushroom soup, garlic powder, onion powder, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  • While the beef mixture is simmering, cook the elbow macaroni according to package directions until al dente.
  • Drain the macaroni well and toss with the olive oil (if using).
  • In the prepared baking dish, spread half of the cooked macaroni evenly over the bottom.
  • Pour the entire beef mixture over the macaroni layer.
  • Top with the remaining macaroni.
  • Sprinkle the cheddar cheese and mozzarella cheese evenly over the top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Let the casserole stand for 5-10 minutes before serving.

Notes

For a spicier casserole, add a pinch of red pepper flakes to the beef mixture or use diced tomatoes with green chilies. You can also add cooked vegetables like corn, peas, or carrots. Leftovers can be stored in the refrigerator for up to 3-4 days and reheated in the microwave or oven. If the casserole is too dry when reheating, add a splash of milk or broth.
