Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into small cubes
  • 1 tbsp olive oil
  • ½ cup mayonnaise
  • 2 tbsp sriracha adjust to your spice preference
  • 1 tbsp sweet chili sauce
  • 1 tbsp rice vinegar
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt to taste
  • Pepper to taste
  • 12 pre-made hamburger buns
  • 4 tbsp butter, melted
  • 2 cups shredded cheddar cheese
  • 2 green onions, thinly sliced optional, for garnish

Instructions
 

  • In a medium bowl, combine mayonnaise, sriracha, sweet chili sauce, rice vinegar, garlic powder, paprika, salt, and pepper to create the dynamite sauce.
  • Add the cubed chicken to the bowl and toss to coat evenly with the dynamite sauce.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken to the skillet and cook until it's cooked through and slightly browned, about 5-7 minutes, stirring occasionally to prevent sticking.
  • Remove from heat and set aside.
  • Preheat your oven to 350°F (175°C).
  • Slice the hamburger buns in half.
  • Brush the cut sides of the buns with melted butter.
  • Place the bottom halves of the buns on a baking sheet.
  • Top each bun with a generous portion of the dynamite chicken.
  • Sprinkle shredded cheese over the chicken.
  • Place the top halves of the buns on top of the cheese.
  • Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly and the buns are golden brown.
  • Remove from oven and let cool for a minute or two before serving.
  • Garnish with thinly sliced green onions, if desired.

Notes

For extra crispy buns, broil them for the last minute of baking, but watch them closely to prevent burning. You can prepare the chicken filling ahead of time and store it in the refrigerator for up to 2 days. Substitute chicken with chickpeas or tofu for a vegetarian option. Try using different types of cheese, such as mozzarella, provolone, or pepper jack. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
