Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • ¼ cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes optional
  • 8 ounces spaghetti noodles
  • Water for cooking noodles
  • 1 cup shredded carrots
  • 1 cup chopped green onions
  • ½ cup frozen peas
  • ¼ cup chopped cilantro
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add the spaghetti noodles and cook according to package directions until al dente.
  • Drain the noodles well and set aside. Optionally, toss with a little olive oil to prevent sticking.
  • In a large skillet or wok, heat the sesame oil over medium-high heat.
  • Add the ground beef and cook, breaking it up with a spoon, until browned.
  • Drain off any excess grease.
  • Add the minced garlic and grated ginger to the skillet and cook for about 30 seconds, until fragrant.
  • Pour in the soy sauce, brown sugar, and rice vinegar. Stir to combine.
  • Add the red pepper flakes (if using) for a little heat.
  • Bring the sauce to a simmer.
  • In a small bowl, whisk together the cornstarch and cold water to create a slurry.
  • Pour the slurry into the skillet and stir continuously until the sauce thickens slightly (1-2 minutes).
  • Add the cooked noodles, shredded carrots, and frozen peas to the skillet.
  • Toss everything together until the noodles are evenly coated in the sauce and the vegetables are heated through.
  • Remove the skillet from the heat and stir in the chopped green onions.
  • Garnish with chopped cilantro before serving.
  • Serve immediately and enjoy!

Notes

Add more veggies like bell peppers or broccoli. Substitute ground beef with ground turkey, chicken, or tofu. Add sriracha or sweet chili sauce for extra heat. Sprinkle with toasted sesame seeds or chopped peanuts for added texture. Fry an egg and place it on top of each serving for a richer meal. To lean into Chinese flavors, add hoisin sauce or use lo mein noodles. Store leftovers in the refrigerator for up to 3 days. Reheat in the microwave or skillet, adding a splash of water or broth if needed.
