Instant Pot Hobo Casserole

Ingredients
  

  • 1 pound Ground Beef
  • 1 medium Yellow Onion, diced
  • 2 cloves Garlic, minced
  • ½ cup Milk
  • 1 teaspoon Worcestershire Sauce
  • Salt and Pepper to taste
  • 2 cups Frozen Diced Hash Browns, slightly thawed

Instructions
 

  • Turn on your Instant Pot and select the "Sauté" function.
  • Add the ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
  • Add the diced onion and minced garlic to the Instant Pot. Sauté for about 3-5 minutes, or until the onion is softened and fragrant.
  • Turn off the "Sauté" function.
  • Add the drained corn, green beans, diced tomatoes (undrained), and drained mushrooms to the Instant Pot.
  • In a separate bowl, whisk together the condensed cream of mushroom soup, milk, and Worcestershire sauce until smooth. Pour this mixture over the vegetables in the Instant Pot.
  • Gently stir everything together to combine.
  • Add the slightly thawed frozen diced hash browns on top of the mixture. Do NOT stir them in; they should form a layer on top.
  • Secure the Instant Pot lid, making sure the valve is set to "Sealing."
  • Select the "Manual" or "Pressure Cook" function and set the cooking time to 15 minutes at high pressure.
  • Once the cooking time is up, allow the Instant Pot to naturally pressure release for 10 minutes. After 10 minutes, carefully quick release any remaining pressure.
  • Carefully remove the lid from the Instant Pot. Be cautious of the hot steam!
  • Gently stir the casserole to combine all the ingredients. The hash browns on top should be tender and slightly browned.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

For a richer flavor, brown the ground beef with a tablespoon of butter. To prevent sticking, ensure there's enough liquid in the pot. If the casserole is too watery after cooking, use the sauté function to reduce the liquid. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through. You can also add a layer of shredded cheddar cheese during the last few minutes of cooking for a cheesy twist.
