Ingredients
  

  • 1.5 lbs Flank Steak, thinly sliced against the grain
  • 1 tbsp Olive Oil
  • 1 tbsp Cornstarch
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • ½ cup Low Sodium Soy Sauce
  • ¼ cup Beef Broth
  • 2 tbsp Brown Sugar
  • 2 tbsp Rice Vinegar
  • 2 tbsp Cornstarch
  • 1 tbsp Sesame Oil
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Ginger, minced
  • ½ tsp Red Pepper Flakes optional
  • 1 head Broccoli, cut into florets
  • Cooked Rice or Noodles, for serving
  • Sesame Seeds, for garnish optional
  • Chopped Green Onions, for garnish optional

Instructions
 

  • In a medium bowl, toss the sliced flank steak with 1 tbsp cornstarch, salt, and pepper.
  • In a separate small bowl, whisk together the soy sauce, beef broth, brown sugar, rice vinegar, 2 tbsp cornstarch, sesame oil, minced garlic, minced ginger, and red pepper flakes (if using).
  • Press the "Sauté" button on your Instant Pot. Add the olive oil to the pot.
  • Once the oil is hot, add the beef in a single layer (work in batches if necessary to avoid overcrowding). Sear the beef for 2-3 minutes per side, until browned.
  • Pour the ginger garlic sauce over the beef.
  • Close and lock the Instant Pot lid. Ensure the valve is set to "Sealing."
  • Press the "Manual" or "Pressure Cook" button and set the cooking time to 5 minutes on high pressure.
  • Once the cooking time is complete, allow the Instant Pot to naturally pressure release for 5 minutes, then quick release any remaining pressure.
  • Carefully open the Instant Pot. Stir in the broccoli florets.
  • Close the lid again and let the broccoli steam for 3-5 minutes, or until it reaches your desired tenderness.
  • Serve immediately over rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.

Notes

For softer broccoli, add it earlier in the cooking process. Adjust the amount of brown sugar or red pepper flakes to your personal preference. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave, skillet, or Instant Pot, adding a splash of water or broth to prevent drying.
