Equipment

  • Large rimmed baking sheet
  • Parchment paper
  • Large mixing bowl
  • Whisk
  • Chef's knife
  • Cutting board
  • Vegetable peeler
  • Spatula
  • Measuring cups and spoons

Ingredients

  • 2 lbs sweet potatoes about 2 large
  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: Fresh thyme or rosemary for garnish

Instructions

  • Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper.
  • Peel the sweet potatoes and cut them into ¾-inch cubes, ensuring they are uniform in size for even cooking.
  • In a large bowl, whisk together the melted butter, honey, cinnamon, salt, and pepper until fully combined and smooth.
  • Add the sweet potato cubes to the bowl with the glaze. Toss well until every piece is evenly coated.
  • Spread the potatoes in a single, even layer on the prepared baking sheet, making sure they have space between them to avoid steaming.
  • Roast for 20 minutes. Remove the pan from the oven and use a spatula to flip the potatoes.
  • Return to the oven and roast for another 10-15 minutes, until the potatoes are tender when pierced with a fork and the edges are caramelized and golden brown.
  • Let the potatoes rest on the hot baking sheet for 2-3 minutes to allow the glaze to set slightly.
  • Transfer to a serving dish and garnish with fresh thyme or a sprinkle of flaky sea salt if desired.

Notes

For best results, do not overcrowd the pan; use two pans if necessary. A hot oven (425°F) is essential for caramelization. Flipping the potatoes halfway through ensures even browning. Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 5-7 minutes to restore crispiness. Variations: Try brown butter for a nuttier flavor, add cayenne for a spicy kick, or toss with fresh garlic and herbs in the last 5 minutes of roasting.
