Ingredients
  

  • 2 large sweet potatoes, peeled and diced into 1-inch cubes
  • 1 pound pre-cooked sausage Italian, Kielbasa, or your favorite
  • 1 medium red onion, sliced
  • 1 bell pepper, any color, seeded and chopped
  • 4 cloves garlic, minced for the bake
  • 2 tablespoons olive oil
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • ¼ teaspoon red pepper flakes optional
  • ¼ cup honey
  • 2 tablespoons soy sauce low sodium preferred
  • 2 cloves garlic, minced for the sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Prepare the vegetables: Peel and dice the sweet potatoes into roughly 1-inch cubes. Slice the red onion and chop the bell pepper. Mince the garlic (4 cloves).
  • Slice the sausage into 1/2-inch rounds.
  • In a large bowl, toss the sweet potatoes, sliced sausage, red onion, bell pepper, and minced garlic (4 cloves) with olive oil, salt, pepper, and red pepper flakes (if using). Make sure everything is evenly coated.
  • Spread the mixture in a single layer on a large baking sheet. Line with parchment paper for easy cleanup.
  • Bake for 20 minutes.
  • While the vegetables are baking, prepare the honey garlic sauce.
  • In a small bowl, whisk together the honey, soy sauce, minced garlic (2 cloves), apple cider vinegar, sesame oil, and cornstarch (if using).
  • After 20 minutes, remove the baking sheet from the oven.
  • Pour the honey garlic sauce over the sweet potato and sausage mixture, tossing gently to coat everything evenly.
  • Return the baking sheet to the oven and bake for another 10-15 minutes, or until the sweet potatoes are tender and the sauce has thickened slightly and is beautifully glazed.
  • Let the bake cool slightly before serving.
  • Garnish with sesame seeds or chopped green onions, if desired.

Notes

For even cooking, cut sweet potatoes into similarly sized cubes. Experiment with different types of sausage. Don't overcrowd the pan; use two baking sheets if necessary. Adjust the amount of red pepper flakes to your spice preference. Cornstarch helps thicken the sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) or in the microwave. Add a splash of water or broth when reheating to prevent the sweet potatoes from drying out. Substitute maple syrup for honey, add grated ginger or lemon zest to the sauce for variations.
