Ingredients
  

  • 1 pound sweet Italian sausage
  • 2 large sweet potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • ¼ cup honey
  • 2 tablespoons soy sauce low sodium preferred
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon red pepper flakes optional
  • ¼ teaspoon ground ginger

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • In a small bowl, whisk together the honey, soy sauce, olive oil, minced garlic, apple cider vinegar, red pepper flakes (if using), and ground ginger until well combined. Set aside.
  • If using sausage links, remove the sausage from the casings and crumble the sausage.
  • In a large bowl, toss the cubed sweet potatoes, chopped bell peppers, and chopped onion with olive oil, salt, and pepper. Make sure everything is evenly coated.
  • Spread the sweet potato mixture in a single layer on the prepared baking sheet.
  • Scatter the crumbled sausage evenly over the sweet potatoes and vegetables.
  • Drizzle the honey garlic sauce over the entire mixture, distributing it evenly.
  • Bake for 25-30 minutes, or until the sweet potatoes are tender and the sausage is cooked through. Halfway through baking, gently stir the mixture to ensure even cooking and prevent sticking.
  • Remove from the oven and garnish with fresh parsley. Serve immediately.

Notes

For easier sweet potato prep, microwave them for 2-3 minutes before peeling and cutting. Pre-cooked sausage can be used to reduce baking time. The honey garlic sauce can be made ahead of time and stored in the refrigerator for up to 3 days. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or skillet.
