Ingredients
  

  • 1 pound Sausage Italian, Smoked, or Kielbasa
  • 2 large Sweet Potatoes, peeled and cubed 1-inch cubes
  • 1 medium Onion, chopped
  • 1 tablespoon Olive Oil for roasting
  • ¼ cup Honey
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Olive Oil for glaze
  • 2 cloves Garlic, minced
  • 1 teaspoon Apple Cider Vinegar
  • ½ teaspoon Red Pepper Flakes optional
  • Salt and Pepper to taste
  • Fresh Parsley, chopped optional, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the cubed sweet potatoes and chopped onion with 1 tablespoon of olive oil, salt, and pepper until evenly coated.
  • Spread the sweet potatoes and onion in a single layer on a baking sheet. Use two baking sheets if needed to avoid overcrowding.
  • Roast the sweet potatoes and onion for 15 minutes.
  • While the sweet potatoes are roasting, whisk together the honey, soy sauce, 2 tablespoons of olive oil, minced garlic, apple cider vinegar, and red pepper flakes (if using) in a small bowl to create the honey garlic glaze.
  • After the sweet potatoes have been roasting for 15 minutes, add the sausage (cut into 1-inch pieces) to the baking sheet. Toss everything together to combine.
  • Pour the honey garlic glaze over the sausage and sweet potato mixture, ensuring everything is evenly coated.
  • Return the baking sheet to the oven and continue to roast for another 20-25 minutes, or until the sweet potatoes are tender and the sausage is cooked through and nicely browned.
  • Garnish with fresh parsley (if desired) and serve immediately.

Notes

For best results, use high-quality honey and freshly minced garlic for the glaze. Don't overcrowd the baking sheet to ensure proper roasting and caramelization. Adjust cooking time as needed based on your oven. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or added to frittatas or tacos. Consider adding other vegetables like bell peppers or broccoli for extra nutrients and flavor.
