Crunchy Homemade Granola with oats, nuts, and dried fruit on a rustic wooden table

Homemade Granola A Healthy Crunchy Treat

Avatar photoAmelia Chen-Morrison
This recipe shatters the myth of bland, store-bought granola, delivering deeply toasted, impossibly crunchy clusters naturally sweetened with maple syrup and coconut sugar. The secret to giant, bakery-style clusters is a single whisked egg white, while a low-and-slow baking technique ensures perfect toasting without burning. It's a versatile, customizable staple that elevates breakfast, snacks, and desserts.

Equipment

  • Large rimmed baking sheet
  • Parchment paper
  • Large mixing bowl
  • small mixing bowl
  • Tiny bowl
  • Whisk
  • Spatula
  • Measuring cups
  • Measuring spoons
  • Large spatula (for flipping)
  • Cooling rack (optional)

Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup raw nuts almonds, pecans, or walnuts
  • ½ cup raw seeds pumpkin or sunflower
  • ⅓ cup coconut oil, melted
  • ⅓ cup pure maple syrup
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • ½ teaspoon fine sea salt
  • ½ cup dried fruit raisins, cranberries, or cherries

Instructions

  • Preheat your oven to 300°F (150°C). Line a large, rimmed baking sheet with parchment paper.
  • In a very large bowl, combine the rolled oats, chopped nuts, and seeds. Stir to distribute evenly.
  • In a separate small bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, and salt.
  • In a third tiny bowl, whisk the egg white until frothy and slightly opaque, about 30 seconds.
  • Pour the wet mixture over the dry ingredients and stir until every oat and nut is thoroughly coated.
  • Pour the frothy egg white over the top and stir again until the mixture looks slightly wet and clumpy.
  • Spread the granola mixture onto the prepared baking sheet in an even layer. Use a spatula or your hands to firmly press the mixture down into a compact, flat slab.
  • Bake for 20 minutes.
  • Remove the pan from the oven. Do NOT stir the granola. Carefully flip the entire slab over in one piece using a large spatula. Press it down again gently.
  • Return to the oven and bake for another 15-20 minutes, until deeply golden and fragrant.
  • Remove the pan from the oven and let the granola cool completely on the pan without touching it. This is non-negotiable for developing crunch.
  • Once cool, break the granola into clusters of your desired size and stir in the dried fruit.

Notes

Storage: Store in an airtight container at room temperature for up to 2 weeks. For longer storage, freeze for up to 3 months. Variations: Try the Brown Butter Bliss (substitute browned butter for coconut oil), Spiced Chai (add 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cardamom, pinch of cloves), Chocolate Cherry (stir in 1/2 cup dried cherries and 1/3 cup dark chocolate chips after cooling), or Citrus Zest (add zest of one orange to wet ingredients). Substitutions: Use melted butter or avocado oil instead of coconut oil; honey or agave instead of maple syrup; extra seeds or coconut flakes instead of nuts; certified gluten-free oats for a gluten-free version. Reduce maple syrup to 1/4 cup for a less sweet granola.
