Equipment

  • small mixing bowl
  • Measuring spoons
  • Small whisk or fork
  • Airtight container (e.g., small glass jar or spice tin)
  • Label and marker

Ingredients

  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon sugar

Instructions

  • Gather all of your spices and measuring spoons.
  • In a small bowl, combine the chili powder, smoked paprika, ground cumin, garlic powder, onion powder, dried oregano, cayenne pepper, black pepper, salt, and sugar.
  • Using a small whisk or a fork, whisk vigorously for about 30 seconds until all the spices are evenly distributed and any clumps are broken up.
  • Carefully pour the seasoning into an airtight container, such as a small glass jar or a spice tin.
  • Label the container with the date and contents (e.g., 'Fajita Seasoning - [Date]').
  • Store in a cool, dark place, like your spice cabinet, away from the stove or direct sunlight. Use immediately or within 6 months for the best flavor.
  • To use, apply 2 to 3 tablespoons of this seasoning per pound of meat or vegetables.

Notes

For a less spicy blend, omit the cayenne pepper entirely. If you don't have smoked paprika, you can use regular sweet paprika and add a tiny pinch of liquid smoke to your marinade. To reduce sodium, start with 1/2 teaspoon of salt and adjust to taste. This seasoning is naturally gluten-free, but always check labels on pre-ground spices to ensure no cross-contamination. For a flavor boost, add the finely grated zest of one lime or orange to the mix. Use within 6 months for optimal potency.
