Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • Cooking spray or oil, for greasing the baking dish

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the diced onion to the skillet and cook until softened, about 5 minutes.
  • In a large bowl, combine the browned ground beef and onion mixture with the corn, green beans, cream of mushroom soup, diced tomatoes (undrained), garlic powder, salt, and pepper. Stir well to combine.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  • Crush the potato chips in a resealable bag or with your hands.
  • Sprinkle the crushed potato chips evenly over the cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the potato chips are golden brown.
  • Let the casserole cool for a few minutes before serving.

Notes

For a crisper potato chip topping, add the crushed chips just before baking. To prevent a soggy casserole, ensure the corn and green beans are well-drained. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave until warmed through. Feel free to customize this recipe with your favorite vegetables or cheeses. For a spicier kick, add diced jalapeños or a dash of hot sauce.
