Ingredients
  

  • 2.5 lbs chuck roast, stew meat, or bottom round roast, cut into 1-inch cubes
  • 0.5 cup unsalted butter
  • 8 cloves garlic, minced
  • 1 cup low sodium beef broth
  • 2 tbsp low sodium soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp packed brown sugar (optional)
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • salt and pepper to taste
  • fresh parsley, chopped (optional garnish)

Instructions
 

  • Trim excess fat from the beef and cut into 1-inch cubes.
  • In a skillet over medium heat, melt the butter.
  • Add minced garlic and sauté for 1–2 minutes until fragrant.
  • Transfer beef cubes to the slow cooker. Add garlic butter, beef broth, soy sauce, Worcestershire sauce, brown sugar (optional), thyme, rosemary, salt, and pepper.
  • Stir well to coat beef evenly with the sauce.
  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is fork-tender.
  • Optional: Shred beef with two forks if using for wraps or salads.
  • Garnish with fresh parsley and serve hot.

Notes

You can use budget-friendly cuts like chuck roast or stew meat — the slow cooker will make them tender. For extra flavor, sear the beef before slow cooking, and thicken the sauce near the end if desired.
