Equipment

  • Large non-stick skillet or wok
  • Medium mixing bowl
  • Small bowl or liquid measuring cup
  • Chef's knife
  • Cutting board
  • Measuring spoons
  • Measuring cups
  • Microplane or Zester
  • Garlic press (optional)
  • Wooden spoon or spatula
  • Plate for cooked chicken

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 3 tablespoons cornstarch, divided
  • 1 pinch salt
  • 1 splash low-sodium soy sauce for velveting
  • 2 tablespoons avocado oil or vegetable oil
  • ½ cup fresh orange juice about 2 oranges
  • 2 tablespoons low-sodium soy sauce or tamari
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • Zest of 1 orange
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil optional
  • Green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions

  • In a medium bowl, toss the chicken pieces with a pinch of salt, a splash of soy sauce, and 1 tablespoon of the cornstarch. Let it sit for 5 minutes to velvet the chicken.
  • In a small bowl or liquid measuring cup, combine the fresh orange juice, remaining 2 tablespoons of cornstarch, 2 tablespoons soy sauce, honey, rice vinegar, and orange zest. Whisk until the cornstarch is completely dissolved and no lumps remain. Set aside.
  • Heat the avocado oil in a large non-stick skillet or wok over medium-high heat until shimmering. Add the chicken pieces in a single layer (work in batches if needed to avoid overcrowding). Cook for 3-4 minutes per side, until golden brown and cooked through. Transfer the chicken to a plate.
  • Reduce the heat to medium. Add the minced garlic and grated ginger to the same pan. Stir constantly for about 30 seconds until fragrant.
  • Give the sauce mixture a quick whisk and pour it into the pan with the aromatics. Stir continuously. Within 1-2 minutes, the sauce will thicken into a glossy glaze.
  • Return the seared chicken to the pan. Toss everything together until every piece is evenly coated in the glaze. Drizzle with sesame oil if using, and remove from the heat immediately.
  • Garnish with sliced green onions and sesame seeds. Serve immediately over rice or your choice of base.

Notes

For a spicy kick, add 1-2 teaspoons of chili garlic sauce or red pepper flakes to the sauce while it simmers. To make it a complete one-pan meal, after searing the chicken, sauté a cup of broccoli florets or snap peas in the pan for 2 minutes before adding the sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave.
