Healthy and Refreshing Beet Juice

Equipment

Ingredients
  

  • 2 medium beets
  • 2 medium carrots
  • 1 medium apple Granny Smith or Fuji
  • 1- inch piece of ginger
  • ½ lemon or lime

Instructions
 

  • Wash all fruits and vegetables thoroughly under cold, running water. Use a vegetable brush to scrub away any dirt or debris from the beets and carrots.
  • Trim the tops and bottoms of the beets, carrots, and apple. Peel the beets if they have thick or rough skin. Quarter the lemon or lime.
  • Chop the beets, carrots, apple, and ginger into pieces that will fit easily into your juicer's feed tube.
  • Turn on your juicer and begin by feeding the softer ingredients, like the apple, into the juicer.
  • Gradually add the beets and carrots, alternating with the softer ingredients to prevent the juicer from getting clogged.
  • Add the ginger to the juicer. Start with a small piece and add more to taste.
  • Squeeze the lemon or lime quarters into the juicer to brighten the flavors.
  • Pour the juice into a glass and enjoy immediately for the best flavor and nutritional benefits.

Notes

For a sweeter juice, add more apple or carrots. If you find the beet flavor too strong, try adding a small piece of orange or pineapple. Store leftover juice in an airtight container in the refrigerator for up to 24 hours, but be aware that the nutritional value may decrease over time. Clean your juicer immediately after use to prevent pulp from hardening and making it difficult to clean. Consider adding beet greens for extra nutrients, but start with a small amount due to their bitter taste. If you don't have a juicer, you can blend the ingredients with a little water and strain the mixture through a nut milk bag or cheesecloth.
