Ingredients
  

  • 1 pound ground beef
  • 1 large onion, thinly sliced
  • 1 bell pepper green or red
  • 8 ounces sliced mushrooms optional
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • Pinch of red pepper flakes optional
  • 6-8 slices provolone cheese or cheese whiz
  • 4 hoagie rolls, split horizontally
  • 2 tablespoons butter, melted

Instructions
 

  • Slice the onion and bell pepper into thin strips. Slice mushrooms if using.
  • Mince the garlic.
  • Heat the olive oil in a large skillet or cast-iron pan over medium heat.
  • Add the sliced onions and bell peppers to the skillet. Cook, stirring occasionally, until softened and slightly caramelized, about 8-10 minutes.
  • If using mushrooms, add them to the skillet along with the garlic during the last 2-3 minutes of cooking.
  • Remove the vegetables from the skillet and set them aside.
  • In the same skillet, add the ground beef. Break it up with a spoon or spatula and cook until browned and fully cooked through. Drain off any excess grease.
  • Season the ground beef with Worcestershire sauce, salt, pepper, garlic powder, and red pepper flakes (if using). Stir to combine.
  • Add the sautéed vegetables back to the skillet with the ground beef. Stir to combine.
  • Reduce the heat to low. Arrange the provolone cheese slices (or dollops of cheese whiz) over the ground beef and vegetable mixture.
  • Cover the skillet and let the cheese melt completely, about 2-3 minutes. Add a splash of water for extra melting.
  • While the cheese is melting, brush the inside of each hoagie roll with melted butter.
  • Place the rolls open-face on a baking sheet and toast them in a preheated oven at 350°F (175°C) for about 3-5 minutes, or until lightly golden brown. Alternatively, toast in a dry skillet over medium heat.
  • Carefully spoon the ground beef and cheese mixture into each toasted hoagie roll.
  • Serve immediately and enjoy!

Notes

Don't overcrowd the pan when browning the ground beef. Provolone is a classic cheese choice, but feel free to experiment with other cheeses. Toasting the rolls before adding the filling is key to preventing sogginess. For a spicy kick, add red pepper flakes or sliced jalapeños. For a pizza cheesesteak, stir in pizza sauce and top with mozzarella. Leftovers can be reheated in the oven or skillet. Avoid the microwave to prevent soggy bread.
