Ingredients
  

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • ½ cup ranch dressing
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions
 

  • Cut the chicken breast into 1-inch cubes.
  • In a bowl, combine the chicken cubes with ranch dressing, minced garlic, Parmesan cheese, olive oil, salt, and pepper.
  • Mix well to ensure the chicken is evenly coated.
  • Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Thread the marinated chicken cubes onto the skewers, leaving a small space between each piece.
  • Preheat your grill to medium heat (around 350-400°F).
  • Make sure the grill grates are clean and lightly oiled to prevent sticking.
  • Place the chicken skewers on the preheated grill.
  • Cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has a slight char and an internal temperature of 165°F.
  • Remove the chicken skewers from the grill and garnish with fresh parsley.
  • Serve immediately and enjoy!

Notes

For best results, marinate the chicken for at least 30 minutes. If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Add a pinch of red pepper flakes for a touch of heat. For a dairy-free option, use vegan parmesan cheese and dairy-free ranch. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
