Grilled Avocado Chicken Wraps

These Grilled Avocado Chicken Wraps are a quick and easy weeknight meal. Smoky grilled chicken and creamy grilled avocado are combined with your favorite toppings and wrapped in a warm tortilla for a healthy and flavorful dish.

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 2 ripe avocados, halved and pitted
  • 1 tbsp lime juice
  • Pinch of salt
  • 4 large tortillas whole wheat, spinach, or your favorite
  • ½ cup shredded cheese cheddar, Monterey Jack, or a blend
  • ¼ cup your favorite sauce ranch, chipotle mayo, or salsa
  • Optional toppings: chopped tomatoes
  • Optional toppings: shredded lettuce
  • Optional toppings: red onion

Instructions
 

  • Preheat your grill to medium-high heat. If you don't have a grill, a grill pan or even a regular skillet will work just fine.
  • In a small bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Brush the chicken breasts with the olive oil mixture, ensuring they're evenly coated.
  • Place the chicken breasts on the preheated grill.
  • Grill for 6-8 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the grill and let it rest for 5 minutes before slicing or shredding.
  • While the chicken is resting, prepare the avocado. Gently brush the cut side of each avocado half with lime juice and sprinkle with a pinch of salt.
  • Place the avocado halves, cut-side down, on the grill.
  • Grill for 2-3 minutes, or until grill marks appear and the avocado is slightly softened.
  • Remove the avocado from the grill and let it cool slightly.
  • Warm the tortillas in a dry skillet or microwave for a few seconds to make them more pliable.
  • Lay a tortilla flat on a clean surface.
  • Spread your favorite sauce evenly over the tortilla.
  • Add a layer of shredded cheese.
  • Top with sliced or shredded grilled chicken and a scoop of grilled avocado.
  • Add any optional toppings, such as chopped tomatoes, shredded lettuce, or red onion.
  • Carefully fold in the sides of the tortilla and roll it up tightly, starting from the bottom.
  • Serve your Grilled Avocado Chicken Wraps immediately.
  • For a little extra crispiness, you can grill the assembled wraps for a minute or two on each side, until they're lightly golden brown.

Notes

For extra flavor, marinate the chicken beforehand. To prevent soggy wraps, use a light hand with the sauce and don't overfill the tortilla. Spice it up by adding a pinch of cayenne pepper to the chicken seasoning or use a spicy chipotle mayo. For a Mediterranean twist, use feta cheese, olives, and a lemon-herb dressing.
