Ingredients
  

  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 cup chopped pecans
  • Vanilla ice cream or whipped cream for serving, optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking dish with butter or cooking spray.
  • In a large bowl, whisk together the pumpkin puree, evaporated milk, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, mixing well after each addition.
  • Stir in the pumpkin pie spice, cinnamon, ginger, cloves, salt, and vanilla extract.
  • Pour the pumpkin filling into the prepared baking dish and spread evenly.
  • In a separate bowl, whisk together the flour, sugar, baking powder, and salt.
  • Pour in the milk and melted butter and stir until just combined. Do not overmix.
  • Gently fold in the chopped pecans.
  • Drop spoonfuls of the cobbler topping evenly over the pumpkin filling.
  • Bake in the preheated oven for 50-60 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean. The filling will still be gooey.
  • Let the cobbler cool slightly for 15-20 minutes before serving.
  • Serve warm, preferably with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For best results, use pumpkin puree and not pumpkin pie filling. Don't overmix the cobbler topping to avoid a tough texture. Melted butter in the cobbler topping creates a tender and slightly crispy crust. Cool slightly before serving to allow the filling to set up. Leftovers can be stored in the refrigerator for up to 3 days. For a spicier cobbler, add a pinch of cayenne pepper to the pumpkin filling. You can also add chocolate chips or substitute pecans with other nuts. For a gluten-free option, use a gluten-free all-purpose flour blend.
