Ingredients
  

  • 1 pound pasta spaghetti, fettuccine, or linguine
  • 8-10 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese, plus more for serving
  • ¼ cup pasta water, reserved
  • ¼ teaspoon red pepper flakes optional
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish optional
  • Olive oil optional, for drizzling

Instructions
 

  • Bring a large pot of salted water to a rolling boil.
  • Add the pasta and cook according to package directions until al dente.
  • Reserve 1/4 cup of the starchy pasta water before draining.
  • Drain the pasta in a colander and set aside without rinsing.
  • Melt the butter in a large skillet over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden, being careful not to burn it.
  • Pour in the heavy cream and bring to a simmer.
  • Reduce the heat to low and let it simmer for 3-5 minutes, stirring occasionally, until the cream has slightly thickened.
  • Remove the skillet from the heat and stir in the grated Parmesan cheese until it is completely melted and smooth.
  • If the sauce is too thick, add a tablespoon or two of the reserved pasta water until it reaches the desired consistency.
  • Season the sauce with salt, freshly ground black pepper, and red pepper flakes (if using). Taste and adjust seasonings as needed.
  • Add the drained pasta to the skillet with the sauce and toss gently to coat, ensuring every strand is covered.
  • Serve immediately, garnished with fresh parsley and extra grated Parmesan cheese. Drizzle with olive oil if desired.

Notes

For the best flavor, use freshly grated Parmesan cheese and mince the garlic just before cooking. Don't overcook the pasta; al dente is key for the right texture. Reserve pasta water – it's crucial for creating a creamy sauce. Add grilled chicken, shrimp, or vegetables like spinach or broccoli for variations. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of milk or cream if needed.
