Ingredients
  

  • 2-3 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • Salt to taste
  • Pepper to taste
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter
  • 1 tbsp cornstarch optional
  • 1 tbsp chopped fresh parsley, for garnish optional

Instructions
 

  • Pat the chicken breasts dry with paper towels.
  • In a small bowl, mix together the garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Sprinkle the spice mixture generously over both sides of the chicken breasts.
  • Heat the olive oil in a large skillet over medium-high heat (optional).
  • Sear the seasoned chicken breasts for about 2-3 minutes per side, until lightly golden brown (optional).
  • In a medium bowl (or directly in the crockpot), whisk together the minced garlic, chicken broth, heavy cream, grated Parmesan cheese, and butter.
  • If desired, whisk in cornstarch until completely dissolved for a thicker sauce.
  • Place the seared (or unseared) chicken breasts in the bottom of your crockpot.
  • Pour the Garlic Parmesan sauce evenly over the chicken.
  • Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours.
  • Shred the chicken directly in the crockpot using two forks.
  • Give everything a good stir to make sure the chicken is evenly coated.
  • Garnish with fresh chopped parsley, if desired.
  • Serve over rice, pasta, mashed potatoes, or in sandwiches.

Notes

Don't overcook the chicken, as it can become dry. Adjust the sauce thickness by adding more Parmesan or a cornstarch slurry. Add vegetables like broccoli, mushrooms, or spinach for extra nutrients. Freshly grated Parmesan is recommended for the best flavor. Spice it up with a pinch of red pepper flakes. To thicken a thin sauce, simmer on high or add a cornstarch slurry. If the sauce is too salty, add a tablespoon of sugar or lemon juice.
