Garlic Parmesan Chicken Meatloaf

Ingredients
  

  • 1.5 lbs ground chicken
  • 1 cup breadcrumbs plain or Italian seasoned
  • ½ cup grated Parmesan cheese, plus more for topping
  • ¼ cup milk
  • 1 large egg, lightly beaten
  • 4 cloves garlic, minced for meatloaf
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • 2 tablespoons butter, melted for topping
  • 2 cloves garlic, minced for topping
  • ¼ cup grated Parmesan cheese for topping
  • 1 tablespoon chopped fresh parsley for topping

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Mince the garlic and chop the parsley.
  • Measure out the breadcrumbs and Parmesan cheese.
  • In a small skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for 1-2 minutes, or until fragrant. Remove from heat and set aside.
  • In a large bowl, gently combine the ground chicken, breadcrumbs, Parmesan cheese, milk, egg, sautéed garlic (including the oil!), Italian seasoning, salt, pepper, and parsley.
  • Mix everything together with your hands, but be careful not to overmix.
  • Lightly grease a loaf pan (approximately 9x5 inches).
  • Gently transfer the meatloaf mixture to the prepared pan and shape it into a loaf.
  • In a small bowl, whisk together the melted butter, minced garlic, Parmesan cheese, and parsley.
  • Brush the garlic parmesan topping evenly over the top of the meatloaf.
  • Sprinkle with a little extra Parmesan cheese, if desired.
  • Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove the meatloaf from the oven and let it rest for about 10-15 minutes before slicing and serving.

Notes

Don't overmix the meatloaf mixture to avoid a tough meatloaf. Use a meat thermometer to ensure it's cooked through. Let it rest before slicing for a more tender result. For variations, add red pepper flakes for spice, finely diced vegetables for extra flavor, or experiment with different types of breadcrumbs. To make it gluten-free, use gluten-free breadcrumbs. Store leftover meatloaf in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven.
