Ingredients
  

  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Take the steaks out of the refrigerator about 30 minutes before cooking.
  • Pat the steaks dry with paper towels and season generously with salt and pepper.
  • Heat the olive oil in a large, heavy-bottomed skillet (cast iron is ideal) over high heat until it's shimmering hot.
  • Carefully place the steaks in the hot skillet. Don't overcrowd the pan – if necessary, cook them in batches.
  • Sear for 3-4 minutes per side for medium-rare, or longer depending on your desired level of doneness. Use a meat thermometer to ensure accurate cooking. For medium-rare, aim for an internal temperature of 130-135°F.
  • While the steaks are searing, prepare the garlic butter sauce. In a small saucepan, melt the butter over medium heat.
  • Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to burn the garlic.
  • Stir in the parsley, thyme, and red pepper flakes (if using).
  • Remove from heat and stir in the lemon juice. Season with salt and pepper to taste.
  • During the last minute of cooking, add the garlic butter to the skillet and spoon it over the steaks, basting them continuously.
  • Remove the steaks from the skillet and transfer them to a cutting board. Let them rest for at least 5-10 minutes before slicing.
  • Slice the steak against the grain and drizzle with any remaining garlic butter sauce from the skillet. Serve immediately.

Notes

For best results, use a meat thermometer to ensure your steak is cooked to your desired doneness. Letting the steak rest before slicing allows the juices to redistribute, resulting in a more tender and flavorful steak. For added flavor, consider adding a splash of Worcestershire sauce to the garlic butter or topping the steak with crumbled blue cheese or goat cheese.
