Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • ½ tsp dried Italian herbs
  • Salt and pepper to taste
  • 1 lb pasta (penne, rotini, or fusilli)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional)

Instructions
 

  • Cook the pasta according to package directions. Drain and set aside.
  • Season the chicken bites with salt, pepper, and Italian herbs.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, 5–7 minutes. Remove and set aside.
  • Add remaining 2 tablespoons of butter to the skillet. Add garlic and cook 30 seconds until fragrant.
  • Pour in the heavy cream and bring to a simmer. Cook 2–3 minutes until slightly thickened.
  • Stir in the Parmesan cheese until melted and smooth.
  • Add cooked pasta and chicken to the skillet. Toss everything to coat in the sauce.
  • Garnish with parsley, if using. Serve immediately.

Notes

Try adding broccoli, spinach, or mushrooms to the pasta for a veggie boost. You can also substitute cream with half-and-half for a lighter version. Use freshly grated Parmesan for best flavor!
