Equipment

  • Slow cooker
  • Large skillet
  • Large bowl
  • Measuring cups
  • Measuring spoons
  • Paper towels
  • Tongs
  • Spatula
  • Fork

Ingredients

  • 2 lbs Beef Chuck, cut into 1-inch cubes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • ½ cup Butter, unsalted
  • 6 cloves Garlic, minced
  • ¼ cup Beef Broth
  • 2 tablespoons Soy Sauce, low sodium
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Honey
  • 1 teaspoon Dried Parsley
  • ½ teaspoon Red Pepper Flakes optional
  • Cooked rice, mashed potatoes, noodles, or cauliflower rice for serving

Instructions

  • Pat the beef cubes dry with paper towels.
  • In a large bowl, toss the beef with olive oil, salt, pepper, garlic powder, and onion powder. Make sure every piece is coated.
  • Heat a large skillet over medium-high heat.
  • Working in batches, sear the beef on all sides until nicely browned. Don't overcrowd the pan, or the beef will steam instead of sear.
  • Transfer the seared beef to your slow cooker.
  • In the same skillet, melt the butter over medium heat.
  • Add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to burn the garlic!
  • Pour in the beef broth, soy sauce, Worcestershire sauce, and honey. Stir well to combine.
  • Add the dried parsley and red pepper flakes (if using). Bring the sauce to a simmer, then remove from heat.
  • Pour the garlic butter sauce over the seared beef in the slow cooker.
  • Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the beef is very tender.
  • Once the beef is cooked, shred it slightly with two forks.
  • Serve the garlic butter beef bites over rice, mashed potatoes, noodles, or cauliflower rice. Garnish with extra parsley, if desired.

Notes

For extra tender beef, cook on low for the full 8 hours. Don't skip the searing step – it's crucial for flavor and texture. To add more flavor, consider adding sliced mushrooms to the slow cooker. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2-3 months. Reheat in the microwave, stovetop, or slow cooker, adding a splash of beef broth if needed to prevent drying.
