Equipment

  • grill or grill pan
  • Medium Bowl (for marinade)
  • Small Bowl (for tzatziki)
  • Whisk
  • Box grater
  • Clean kitchen towel or paper towels
  • Tongs
  • Cutting board
  • Chef's knife
  • Meat thermometer

Ingredients

  • For the Grilled Chicken:
  • 1.5 lbs boneless, skinless chicken thighs
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice from about 2 lemons
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For the Homemade Tzatziki:
  • 1 cup full-fat plain Greek yogurt
  • ½ large cucumber, grated
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, finely minced
  • ¼ teaspoon salt
  • For Assembly:
  • 4 large flatbreads or naan
  • 1 head Romaine lettuce, chopped
  • 2 Roma tomatoes, diced
  • ½ red onion, thinly sliced

Instructions

  • In a medium bowl, whisk together the olive oil, 1/4 cup lemon juice, 3 minced garlic cloves, dried oregano, salt, and pepper. Add the chicken thighs and toss to coat completely. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  • While the chicken marinates, prepare the tzatziki. Place the grated cucumber in a clean kitchen towel and squeeze firmly to remove all excess water. In a small bowl, combine the squeezed cucumber, Greek yogurt, chopped dill, 1 tablespoon lemon juice, and 1 minced garlic clove. Stir well and season with salt. Refrigerate until ready to use.
  • Prepare the fresh vegetables for assembly. Wash and chop the romaine lettuce, dice the tomatoes, and thinly slice the red onion. Set aside.
  • Preheat a grill or grill pan to medium-high heat and lightly oil the grates. Remove the chicken from the marinade, allowing any excess to drip off. Grill for 5-7 minutes per side, until cooked through and nicely charred. The internal temperature should reach 165°F (74°C).
  • Transfer the grilled chicken to a cutting board and let it rest for 5-10 minutes to allow the juices to redistribute. After resting, slice the chicken into thin strips against the grain.
  • Warm the flatbreads on the grill or in a dry skillet for about 30 seconds per side. To assemble, lay a warm flatbread flat, spread a generous layer of tzatziki down the center, top with sliced grilled chicken, and finish with lettuce, tomatoes, and red onion. Fold and serve immediately.

Notes

For best results, do not skip squeezing the water from the grated cucumber; this is crucial for a thick, creamy tzatziki. Ensure chicken is cooked to 165°F but not overcooked, and always let it rest before slicing for maximum juiciness. For variations, try using chicken breast, steak strips, or grilled halloumi for a vegetarian option. You can also boost the flavor by adding crumbled feta cheese, Kalamata olives, or a pinch of red pepper flakes to the marinade.
