Ingredients
  

  • 1.5 cups old-fashioned rolled oats
  • ½ cup almond flour
  • 2 tbsp ground flax seeds
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • 1 large ripe banana, mashed about 1/2 cup
  • ½ cup natural nut butter peanut or almond
  • ¼ cup pure maple syrup
  • 1 large egg
  • ½ cup dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
  • In a large mixing bowl, add the mashed banana, nut butter, maple syrup, and egg. Whisk everything together until smooth and well-combined.
  • Add the rolled oats, vanilla protein powder, almond flour, ground flax seeds, cinnamon, baking soda, and salt directly into the same bowl. Mix with a spatula until just combined, being careful not to over-mix.
  • Gently fold in the dark chocolate chips until they are evenly distributed throughout the dough.
  • Using a medium cookie scoop (about 1.5 tablespoons), drop rounded balls of dough onto the prepared baking sheet, leaving about two inches of space between each.
  • Gently press down on the top of each ball with your palm or the bottom of a glass to flatten them into a cookie shape, as they will not spread much.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers still look slightly soft. They will firm up as they cool.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
