Equipment

  • 9x13 inch baking dish
  • Large serrated knife
  • Medium saucepan
  • Small bowl
  • Whisk
  • pastry brush
  • Aluminum foil
  • Oven
  • Serving bowls for au jus

Ingredients

  • 1 lb thinly sliced deli roast beef
  • 8-10 slices provolone cheese
  • ½ cup unsalted butter, melted
  • 1 tablespoon dried minced onion
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon poppy seeds optional
  • 2 cups low-sodium beef broth
  • 1 tablespoon soy sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish. Without separating the rolls, use a serrated knife to slice the entire slab in half horizontally. Place the bottom slab in the prepared dish.
  • To make the au jus, combine beef broth, soy sauce, onion powder, garlic powder, and black pepper in a medium saucepan. Bring to a simmer over medium heat, then reduce heat to low to keep warm while you assemble the sliders.
  • Layer the thinly sliced roast beef evenly over the bottom slab of rolls. Arrange the provolone cheese slices on top of the beef, covering it completely. Place the top slab of rolls over the cheese.
  • In a small bowl, whisk together the melted butter, dried minced onion, and Worcestershire sauce to create the topping.
  • Evenly pour or brush the butter mixture over the top of the rolls. Sprinkle with poppy seeds, if using. Cover the dish loosely with aluminum foil.
  • Bake for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, until the tops are golden brown and the cheese is fully melted and bubbly.
  • Let the sliders rest for a minute or two before using a knife to cut them into individual portions. Serve immediately with the warm au jus for dipping.

Notes

Ingredient Swaps: Brioche or potato rolls can be used instead of Hawaiian rolls. Swiss or Gruyère are great substitutes for provolone cheese.
Gourmet Variations: Add a layer of caramelized onions or sautéed mushrooms over the beef for extra flavor. For a zesty kick, spread a thin layer of horseradish cream on the inside of the top buns.
Pro Tips: Drain any excess liquid from the deli roast beef to prevent soggy bottom buns. Let the cheese come to room temperature before assembling for a more even melt. Taste and adjust the seasoning of the au jus before serving.
Serving Suggestions: These sliders are great with French fries, a crisp green salad, or coleslaw. They are perfect for game day or any party spread.
