Equipment

  • Oven
  • Baking Sheet
  • Parchment paper
  • Two small mixing bowls
  • Fork
  • Spoon or offset spatula
  • Paper towels
  • Knife and cutting board
  • Microplane or Zester

Ingredients

  • 1.5 to 2 lbs salmon fillet, skin-on or skinless
  • ½ cup panko breadcrumbs
  • 1 large lemon, zested and juiced
  • 2 tablespoons fresh dill or parsley, finely chopped, divided
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt, or to taste
  • ¼ teaspoon freshly ground black pepper, or to taste

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the salmon fillet on the parchment, skin-side down if applicable.
  • Pat the salmon completely dry with paper towels. Brush the fillet lightly with olive oil and season it generously with salt and freshly ground black pepper.
  • In a small bowl, combine the softened Boursin cheese with about half of your chopped fresh herbs. Mash with a fork until it's smooth and easily spreadable.
  • Using a spoon or an offset spatula, spread the Boursin mixture evenly over the top of the salmon fillet, covering it from edge to edge.
  • In another small bowl, toss the panko breadcrumbs with the lemon zest and a small drizzle of olive oil. Use your fingers to mix until the panko is lightly coated.
  • Sprinkle the panko mixture evenly over the Boursin layer. Gently press it down so it adheres to the cheese.
  • Place the baking sheet in the preheated oven and bake for 12-16 minutes. The exact time will depend on the thickness of your salmon. The salmon is done when it is opaque, flakes easily with a fork, and the panko topping is golden brown.
  • Remove from the oven and let it rest for a minute. Squeeze the fresh lemon juice over the entire fillet, then sprinkle the remaining fresh herbs over the top. Serve immediately.

Notes

Pro Tips: For best results, let the Boursin cheese soften at room temperature for 20-30 minutes before spreading to avoid tearing the fish. Use parchment paper for easy cleanup. Be careful not to overcook the salmon; remove it from the oven as soon as it begins to flake.
Variations: For added depth, place a layer of thinly sliced shallots on the salmon before the Boursin. Mix 1 tablespoon of toasted, chopped walnuts or a pinch of red pepper flakes into the panko topping for extra crunch or heat.
Substitutions: Other sturdy fish like arctic char or cod can be used. Other Boursin flavors like Shallot & Chive work well. Crushed crackers or gluten-free panko can be substituted for regular panko.
