Equipment

  • Oven
  • Baking dish or rimmed baking sheet
  • Small bowl
  • Measuring spoons
  • Paper towels
  • Instant-Read Meat Thermometer
  • Cutting board
  • Knife

Ingredients

  • 4 boneless, skinless chicken breasts 6-8 ounces each
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano or thyme

Instructions

  • Preheat your oven to 425°F (220°C). Pat the chicken breasts completely dry with paper towels to ensure a crispy, golden crust.
  • In a small bowl, combine the smoked paprika, garlic powder, onion powder, dried oregano (or thyme), salt, and black pepper. Mix well to create the spice rub.
  • Drizzle the olive oil over the chicken breasts, using your hands to coat them evenly on all sides.
  • Sprinkle the spice mixture generously over the chicken, rubbing it in to ensure every part is covered.
  • Place the seasoned chicken in a baking dish or on a rimmed baking sheet, ensuring there is space between each breast to prevent steaming.
  • Bake for 18-22 minutes, or until the internal temperature reaches 165°F (74°C) at the thickest part. The juices should run clear when pierced.
  • Remove the chicken from the oven and transfer it to a clean cutting board. Let it rest for 5-10 minutes before slicing. This is crucial for keeping the chicken juicy.

Notes

For best results, if your chicken breasts are uneven in thickness, gently pound the thicker end to create a more uniform size for even cooking. Don't skip the resting step; it's the most important part for ensuring moist chicken. Feel free to add a pinch of cayenne for heat or swap oregano for Italian seasoning. Leftovers are excellent sliced cold on salads or in sandwiches.
