Equipment

  • Large mixing bowl
  • Box grater
  • Chef's knife
  • Cutting board
  • Large non-stick skillet
  • Spatula
  • Paper towels
  • Plate

Ingredients

  • 1 large yellow onion, grated
  • ½ cup fresh parsley, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp Aleppo pepper or red pepper flakes
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 large pocket-style pita breads
  • ½ cup neutral oil avocado or canola

Instructions

  • In a large bowl, combine the ground meat, grated onion, parsley, cumin, coriander, Aleppo pepper, salt, and black pepper. Mix thoroughly with your hands until cohesive. Let rest for 5 minutes.
  • Carefully open each pita to create a pocket. Divide the meat mixture into 4 equal portions. Gently press one portion into each pita, spreading evenly to the edges without overstuffing. Lightly press the outside to flatten.
  • Heat the oil in a large non-stick skillet over medium-high heat until shimmering. Place 2 stuffed pitas in the pan. Cook for 3-4 minutes per side, until deeply golden brown and crispy, and the meat is cooked through. Repeat with remaining pitas.
  • Transfer cooked Arayes to a plate lined with paper towels to drain excess oil. Let rest for 1 minute, then cut each pita in half. Serve hot.

Notes

For extra juiciness, use 80/20 ground meat and do not skip grating the onion. If using thin pitas, reduce cooking time by 1-2 minutes per side. For a cheesy variation, add 1/2 cup crumbled feta or shredded mozzarella to the meat mixture. Leftover Arayes can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a skillet or oven to restore crispiness.
