Ingredients
  

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 bell pepper any color
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • Sour cream or Greek yogurt optional
  • Avocado, diced optional
  • Chopped cilantro optional
  • Green onions, sliced optional
  • Hot sauce optional
  • Tortilla chips or tortillas optional

Instructions
 

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add the chopped onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  • Stir in the black beans, corn, and diced tomatoes and green chiles.
  • Add the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
  • Sprinkle the shredded cheese over the top of the skillet.
  • Cover the skillet and cook until the cheese is melted, about 1-2 minutes.
  • Remove from heat and garnish with your favorite toppings.
  • Serve immediately with tortilla chips, tortillas, or over rice.

Notes

Don't overcook the turkey. Adjust taco seasoning to taste. Get creative with toppings. This dish is great for meal prep and freezes well. For low carb options, skip tortillas and serve over cauliflower rice. Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop. Freeze for up to 2 months.
