Ingredients
  

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup uncooked rice white, brown, or your favorite
  • 2 cups water or broth
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces optional
  • ¼ cup honey optional
  • 2 tablespoons soy sauce optional
  • 1 tablespoon sriracha or more, to taste) (optional
  • 1 teaspoon garlic powder optional
  • ½ teaspoon ground ginger optional
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheese cheddar, Monterey Jack, or Mexican blend

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rice and water (or broth). Bring to a boil over high heat.
  • Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until all the water is absorbed and the rice is tender.
  • Fluff with a fork and set aside.
  • In a large skillet, brown the ground beef (or turkey) over medium-high heat. Drain off any excess grease.
  • Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
  • Taste and adjust seasoning as needed.
  • In a bowl, whisk together the honey, soy sauce, sriracha, garlic powder, and ginger (if making spicy honey chicken).
  • Add the chicken pieces to the bowl and toss to coat evenly (if making spicy honey chicken).
  • Heat a skillet over medium heat. Add the chicken and cook for 6-8 minutes, or until cooked through and nicely glazed (if making spicy honey chicken).
  • In a bowl, layer rice, taco meat, and (if using) spicy honey chicken.
  • Top with your favorite toppings.
  • Enjoy immediately!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or in a skillet over medium heat until warmed through. The toppings are best added fresh, so store them separately if possible. For a vegetarian option, swap the ground beef for crumbled tofu or black beans. For a spicier version, use chorizo instead of ground beef. Feel free to experiment with different toppings and variations to create your own signature Taco Rice Bowl.
