Ingredients
  

  • 1.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup pumpkin puree
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup chocolate chips, chopped nuts, or dried cranberries (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, sugar, pumpkin pie spice, baking soda, baking powder, and salt.
  • In a separate bowl, whisk together pumpkin puree, oil, eggs, and vanilla extract.
  • Pour wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • If using, fold in optional chocolate chips, nuts, or cranberries.
  • Pour batter into prepared loaf pan and spread evenly.
  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
  • Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. Customize with mix-ins like chocolate chips, nuts, or dried cranberries. This recipe is ideal for muffins too—just reduce bake time to about 20 minutes.
