Equipment

  • Shallow dishes
  • Large oven-safe skillet (or regular skillet and baking dish)
  • Meat mallet or rolling pin (optional)
  • Paper towels
  • Measuring cups and spoons
  • Meat thermometer

Ingredients

  • 4 boneless, skinless chicken breasts 6-8 ounces each
  • 1 cup grated Parmesan cheese
  • ½ cup Italian seasoned breadcrumbs
  • ¼ cup all-purpose flour
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 2 tablespoons olive oil
  • Optional: Fresh parsley, chopped
  • Optional: Lemon wedges
  • Optional: Marinara sauce for dipping

Instructions

  • Preheat oven to 400°F (200°C).
  • Pat chicken breasts dry with paper towels.
  • If chicken breasts are thick, pound them to 1/2-inch thickness.
  • In a shallow dish, combine Parmesan cheese, breadcrumbs, flour, garlic powder, oregano, salt, and pepper.
  • In another shallow dish, lightly beat the eggs.
  • Dredge each chicken breast in the egg mixture, ensuring it’s fully coated.
  • Transfer the chicken to the Parmesan-breadcrumb mixture, pressing firmly to coat both sides completely.
  • Heat olive oil in a large, oven-safe skillet over medium heat.
  • Carefully place the breaded chicken breasts in the skillet, making sure not to overcrowd the pan.
  • Sear each side for about 2-3 minutes, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
  • Serve with desired toppings and side dishes.

Notes

For best flavor, use freshly grated Parmesan cheese. Don't skip the searing step for a golden crust. To prevent overcooking, use a meat thermometer and ensure the internal temperature reaches 165°F (74°C). Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave. For a Chicken Parmesan twist, add marinara sauce and mozzarella cheese during the last few minutes of baking. Add a pinch of red pepper flakes to the breadcrumb mixture for a little heat. Serve with a side salad, roasted vegetables, or pasta with marinara sauce.
