Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 4 oz cream cheese, softened
  • ½ cup shredded mozzarella cheese, plus more for topping
  • ¼ cup chopped green onions
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Optional: Cooked and crumbled bacon
  • Optional: Diced jalapenos

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Place each chicken breast between two sheets of plastic wrap.
  • Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch.
  • Season the chicken breasts with salt and pepper.
  • In a mixing bowl, combine the softened cream cheese, ranch seasoning mix, 1/2 cup of shredded mozzarella cheese, and green onions.
  • If desired, add in the cooked bacon or diced jalapenos.
  • Mix everything together until well combined and creamy.
  • Spread an even layer of the ranch cream cheese mixture over each chicken breast.
  • Carefully roll up each chicken breast, starting from one end.
  • Secure with toothpicks if needed.
  • Heat the olive oil in a large oven-safe skillet or baking dish over medium-high heat.
  • Sear the chicken rolls on all sides until lightly browned.
  • Transfer the skillet to the preheated oven.
  • Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  • Remove the skillet from the oven and sprinkle the chicken rolls with additional mozzarella cheese.
  • Return the skillet to the oven and bake for another 2-3 minutes, or until the cheese is melted and bubbly.
  • Remove the toothpicks (if used) before serving.
  • Let the chicken bombs rest for a few minutes before slicing and serving.
  • Garnish with extra green onions or a sprinkle of ranch seasoning, if desired.

Notes

Leftover Melted Mozzarella Ranch Chicken Bombs can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, microwave for a minute or two, or bake at 350°F (175°C) for 10-15 minutes, or until heated through.
