Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, plus more for garnish
  • ¼ cup chopped fresh parsley, for garnish
  • Red pepper flakes, optional

Instructions
 

  • In a medium bowl, toss the chicken pieces with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper until well coated.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the chicken to the skillet in a single layer (you may need to do this in batches). Cook for 5-7 minutes, or until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.
  • Reduce the heat to medium. Add another tablespoon of olive oil to the skillet.
  • Add the minced garlic and cook for 1-2 minutes, or until fragrant. Be careful not to burn the garlic.
  • Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream and Parmesan cheese. Bring the sauce to a simmer and cook for 2-3 minutes, or until the cheese is melted and the sauce has thickened slightly.
  • Add the gnocchi to the skillet and stir to coat in the sauce.
  • Return the cooked chicken to the skillet.
  • Bring the mixture to a simmer and cook for 5-7 minutes, or until the gnocchi is tender and heated through. If using refrigerated gnocchi, cook until it rises to the surface. Stir occasionally.
  • Remove the skillet from the heat and garnish with fresh parsley and extra Parmesan cheese.
  • Sprinkle with red pepper flakes, if desired.
  • Serve immediately.

Notes

Don't overcrowd the pan when searing the chicken. Use fresh garlic for the best flavor. Adjust the sauce thickness to your liking by simmering longer or adding more chicken broth. Add vegetables like spinach or mushrooms for extra nutrients and flavor. Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet or microwave, adding a splash of broth or water if needed.
