Ingredients
  

  • 1 pound ground pork or ground turkey or chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • ½ cup shredded carrots
  • 2 green onions, sliced
  • ¼ cup soy sauce or coconut aminos
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha or chili garlic sauce
  • 1 teaspoon sweetener honey, maple syrup, or erythritol
  • 1 tablespoon oil
  • Sesame seeds for topping optional
  • Crushed red pepper flakes for topping optional
  • Avocado slices for topping optional
  • Wonton strips for topping optional

Instructions
 

  • In a large skillet or wok, heat a tablespoon of oil over medium-high heat.
  • Add the ground pork (or turkey/chicken) and cook, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  • Add the chopped onion to the skillet and cook until softened, about 3-5 minutes.
  • Stir in the minced garlic and ginger and cook for another minute until fragrant.
  • Pour in the coleslaw mix and shredded carrots.
  • Cook, stirring occasionally, until the cabbage is tender-crisp, about 5-7 minutes.
  • In a small bowl, whisk together the soy sauce (or coconut aminos), rice vinegar, sesame oil, sriracha (or chili garlic sauce), and sweetener.
  • Pour the sauce over the cabbage mixture in the skillet.
  • Stir well to combine and cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat everything evenly.
  • Remove from heat and stir in the sliced green onions.
  • Serve immediately, topped with your favorite toppings like sesame seeds, crushed red pepper flakes, avocado slices, or wonton strips.

Notes

Adjust the sauce to your taste by adding more sweetener for sweetness or sriracha for heat. Use fresh ginger and garlic for the best flavor.
