Ingredients
  

  • 3 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets, chopped fresh or frozen
  • 2 cups cooked rice long-grain, white, or brown
  • ½ cup milk
  • ½ cup mayonnaise
  • 1 ½ cups shredded cheddar cheese, divided
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons butter, melted
  • ½ cup bread crumbs plain or seasoned
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C).
  • If using fresh broccoli, wash and chop it into bite-sized florets. Steam for a few minutes to soften slightly. If using frozen broccoli, thaw it and drain any excess water.
  • If you don't have cooked rice on hand, cook it according to package directions.
  • In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and minced garlic and sauté until softened, about 5 minutes.
  • In a large bowl, combine the cooked chicken, broccoli, cooked rice, cream of chicken soup, cream of mushroom soup, milk, mayonnaise, sautéed onion and garlic, and 1 cup of shredded cheddar cheese. Season with salt and pepper to taste.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • In a small bowl, combine the bread crumbs and melted butter. Sprinkle the mixture over the casserole, then top with the remaining 1/2 cup of shredded cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  • Let the casserole rest for a few minutes before serving.

Notes

Don't overcook the broccoli. Use high-quality ingredients for best flavor. Adjust seasoning to taste. To prevent a soggy casserole, drain excess water from broccoli and rice. Assemble ahead of time and refrigerate for up to 24 hours, adding extra baking time. Can be frozen before or after baking. For a spicier version, add a pinch of red pepper flakes or a dash of hot sauce. Use different cheeses for a cheesier casserole. Use brown rice, low-fat soup, and reduced-fat cheese for a healthier version.
