Equipment

  • Large pot
  • Colander
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Silicone spatula
  • Chef's knife
  • Cutting board
  • Plastic Wrap

Ingredients

  • 1 lb Rotini or Fusilli pasta
  • 1.5 cups High-quality dill pickles, diced half-sour or extra-crunchy
  • ¼ cup Pickle brine reserved from the jar
  • 8 oz Sharp cheddar cheese, diced into small cubes
  • ½ cup Red onion, finely minced
  • 1 cup Mayonnaise
  • ½ cup Sour cream
  • 3 tbsp Fresh dill, finely chopped
  • 1 tbsp BBQ dry rub seasoning
  • 2 tbsp Ranch dressing optional
  • ½ cup Diced celery optional for extra crunch
  • ½ cup Crispy bacon bits optional garnish
  • Crushed BBQ potato chips optional garnish

Instructions

  • Bring a large pot of heavily salted water to a boil. Cook the rotini pasta until al dente, following the lower end of the package's time range.
  • Drain the pasta in a colander but do not rinse it with cold water. Transfer the warm noodles immediately to a large mixing bowl.
  • Pour 1/4 cup of pickle brine over the warm pasta and toss gently. Allow the pasta to cool to room temperature so it absorbs the brine.
  • While the pasta is cooling, dice the pickles, red onion, and cheddar cheese into uniform, small pieces (about the size of a pea).
  • In a separate medium bowl, whisk together the mayonnaise, sour cream, BBQ dry rub, fresh dill, and ranch dressing until the mixture is smooth and spices are evenly distributed.
  • Add the diced pickles, onions, and cheese (and celery, if using) to the bowl with the cooled, brine-infused pasta.
  • Pour the dressing over the ingredients and use a large spatula to gently fold everything together until every noodle is coated.
  • Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, though overnight is recommended for the best flavor development.
  • Just before serving, garnish with extra fresh dill, bacon bits, or crushed BBQ potato chips for added texture.

Notes

Do not rinse the pasta; the surface starch is essential for the dressing to adhere. For a lighter version, substitute half of the mayonnaise with plain Greek yogurt. If you prefer more heat, add a teaspoon of Dijon mustard or a dash of hot sauce to the dressing. Store leftovers in an airtight container for up to 3-4 days.
