Ingredients
  

  • 1 lb lean ground turkey
  • 2 medium zucchini, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced (optional)
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.25 tsp red pepper flakes (optional)
  • salt and black pepper to taste
  • 2 tbsp olive oil
  • optional toppings: shredded cheese, parsley, sour cream, or Greek yogurt

Instructions
 

  • Dice zucchini, onion, bell pepper (if using), and mince the garlic.
  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned and no longer pink, breaking it up as it cooks. Drain excess grease.
  • Add diced onion and bell pepper. Sauté until onion is soft, 5–7 minutes. Add garlic and cook 1 more minute.
  • Stir in zucchini and canned diced tomatoes (with juices). Combine well.
  • Add Italian seasoning, paprika, red pepper flakes (optional), salt, and pepper. Stir to combine.
  • Reduce heat to low, cover, and simmer for 10–15 minutes until zucchini is tender.
  • Serve hot with toppings of your choice like shredded cheese, fresh parsley, or a dollop of sour cream or Greek yogurt.

Notes

Use this as a base and get creative: add mushrooms, spinach, black beans, or swap the protein. Top with cheese or a dollop of yogurt. Great over rice, quinoa, or cauliflower rice for a complete meal.
