Ingredients
  

  • 2 medium cucumbers, diced
  • 3 medium tomatoes, diced
  • 0.25 red onion, thinly sliced
  • 0.25 cup fresh dill, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions
 

  • In a large bowl, combine the cucumbers, tomatoes, and red onion.
  • In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, dill, salt, and pepper.
  • Pour the dressing over the vegetables and toss gently to combine.
  • Chill for at least 30 minutes before serving for best flavor.

Notes

Soak red onions in cold water to mellow the sharpness. Chill the salad before serving to meld the flavors. For variation, try feta, avocado, or bell peppers. Don’t overmix to keep the veggies crisp.
