Ingredients
  

  • 8 ounces cream cheese, softened
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup chopped green onions
  • ¼ cup chopped red bell pepper optional
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • Tortilla chips, crackers, or vegetables for serving

Instructions
 

  • In a large bowl, combine the drained corn, softened cream cheese, mayonnaise, and sour cream. Ensure the cream cheese is fully softened to prevent lumps.
  • Mix well until everything is nicely combined. A hand mixer can be used if needed, but a sturdy spoon will also work.
  • Add the cheddar cheese, green onions, red bell pepper (if using), diced green chilies, garlic powder, and chili powder to the bowl.
  • Gently fold everything together until all ingredients are evenly distributed. Avoid overmixing to prevent a watery dip.
  • Season with salt and pepper to taste. Start with a small amount and adjust as needed.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld. Chilling for longer enhances the taste.
  • Serve cold with your favorite tortilla chips, crackers, or fresh vegetables.

Notes

For best results, ensure the cream cheese is fully softened. Drain the corn well to avoid a watery dip. Taste and adjust seasonings as needed. Store leftovers in an airtight container in the refrigerator for up to 3 days. For a spicier dip, add a pinch of cayenne pepper or use pepper jack cheese. To lighten the dip, substitute half the mayonnaise with Greek yogurt. Consider adding cooked bacon or black beans for extra flavor and texture.
