Ingredients
  

  • 1.5–2 lbs boneless, skinless chicken breasts
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup sun-dried tomatoes, oil-packed and drained
  • 0.25 cup grated Parmesan cheese
  • 1 tbsp chopped fresh basil (optional, for garnish)
  • 0.25 tsp red pepper flakes (optional)

Instructions
 

  • In a shallow dish, mix flour, salt, and pepper. Dredge chicken breasts in the mixture and shake off excess.
  • Heat olive oil in a skillet over medium-high heat. Sear chicken 2–3 minutes per side until lightly browned (optional).
  • Transfer chicken to the Crockpot.
  • In same skillet, sauté chopped onion until softened (about 5 min). Add garlic and cook for 1 more minute.
  • Pour chicken broth into skillet to deglaze, scraping up browned bits.
  • Pour broth mixture over chicken in Crockpot.
  • Add heavy cream, sun-dried tomatoes, Parmesan, and red pepper flakes (if using) to Crockpot. Stir gently to combine.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender and fully cooked.
  • Shred the chicken with two forks inside the Crockpot.
  • Garnish with fresh basil if desired. Serve hot over pasta, rice, or mashed potatoes.

Notes

Add spinach during the last 30 minutes for extra nutrients, or mushrooms for earthy depth. For a dairy-free version, use coconut cream instead of heavy cream. Garnish with fresh basil for a romantic finish.
