Crockpot Chicken and Dumplings

This easy Crockpot Chicken and Dumplings recipe is the perfect comfort food for a weeknight dinner. Simply combine chicken, vegetables, and broth in your slow cooker, then add homemade dumplings for a hearty and delicious meal that's ready when you are.

Ingredients
  

  • 1.5 - 2 lbs boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 1 medium onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • ½ cup milk or heavy cream optional, for extra creaminess
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • ¼ cup melted butter

Instructions
 

  • Season the chicken breasts with salt, pepper, thyme, and rosemary.
  • Place the chopped onion, carrots, and celery in the bottom of your crockpot.
  • Add the minced garlic on top of the vegetables.
  • Place the seasoned chicken breasts on top of the vegetables.
  • Pour the chicken broth over the chicken.
  • Add the can of cream of chicken soup.
  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
  • Once the chicken is cooked, remove it from the crockpot and shred it with two forks.
  • Return the shredded chicken to the crockpot.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • Add the milk and melted butter to the dry ingredients and stir until just combined. Do not overmix! A few lumps are okay.
  • Drop spoonfuls of the dumpling batter into the simmering broth, spacing them evenly around the crockpot.
  • Cover the crockpot and cook on high for 30-45 minutes, or until the dumplings are cooked through and no longer doughy.
  • If you want a richer, creamier broth, stir in the milk or heavy cream during the last 15 minutes of cooking.
  • Carefully remove a portion of Crockpot Chicken And Dumplings and serve hot.
  • Garnish with fresh parsley or chives, if desired.

Notes

Don't overcook the chicken. Overcooked chicken can become dry and stringy. Adjust the broth consistency by adding a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the crockpot during the last 30 minutes of cooking if you prefer a thicker broth. Don't overmix the dumpling batter. Overmixing will result in tough dumplings. Make sure the dumplings are cooked through before serving. They should be light and fluffy, not doughy. Feel free to add other vegetables to the crockpot, such as frozen peas, green beans, or corn during the last hour of cooking. Use rotisserie chicken if you're short on time.
