Equipment

  • Mixing Bowls for egg and breadcrumb mixture
  • wire rack and paper towels for drying zucchini

Ingredients
  

  • 2 medium zucchinis
  • 0.5 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 1 large egg, beaten
  • 2 tbsp olive oil

Instructions
 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Wash and trim ends of zucchinis. Slice into 1/2-inch thick fry shapes.
  • Place fries on paper towel–lined rack. Sprinkle with salt and let sit 30–60 minutes to draw moisture.
  • Pat zucchini dry with paper towels to remove excess moisture.
  • In a dish, mix panko, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
  • In a separate bowl, beat the egg.
  • Dip each zucchini stick in egg, then coat in breadcrumb mix. Ensure even coverage.
  • Arrange coated fries in a single layer on the prepared baking sheet.
  • Drizzle fries with olive oil for extra crispiness.
  • Bake for 15–20 minutes, flipping halfway, until golden brown and crispy.
  • Let cool slightly and serve with your favorite dip.

Notes

To boost crispiness, be sure to salt and drain the zucchini before coating. For added flavor, experiment with Italian herbs or Everything Bagel seasoning. These are best served hot with your favorite dipping sauce.
