Ingredients
  

  • 2 medium zucchini, firm
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray

Instructions
 

  • Wash and dry the zucchini. Trim off the ends and cut each zucchini into fry-shaped sticks, about ½ inch thick.
  • Set up your breading station: In three separate shallow dishes, place the flour, beaten eggs, and breadcrumb mixture.
  • Prepare the breadcrumb mixture: In the dish with the panko breadcrumbs, add the grated Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix well.
  • Dredge each zucchini fry in the flour, making sure to coat all sides. Shake off any excess flour.
  • Dip the floured zucchini fry into the beaten egg, ensuring it's fully coated. Let any excess egg drip off.
  • Dredge the zucchini fry in the breadcrumb mixture, pressing gently to make sure the breadcrumbs adhere.
  • Repeat steps 4-6 for all the zucchini fries.
  • Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
  • Lightly spray the air fryer basket with olive oil spray. Arrange the breaded zucchini fries in a single layer in the basket, making sure they aren't overcrowded. Cook in batches if necessary.
  • Lightly spray the zucchini fries with olive oil spray.
  • Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy. Monitor closely as air fryers vary.
  • Remove the zucchini fries from the air fryer and serve immediately with your favorite dipping sauce.

Notes

For best results, use panko breadcrumbs as they create a crispier coating than regular breadcrumbs. Do not overcrowd the air fryer basket; cook in batches to ensure even cooking and maximum crispiness. Store leftover zucchini fries in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer at 350°F (175°C) for 3-5 minutes to restore some crispness. Consider adding a pinch of cayenne pepper to the breadcrumb mixture for a spicy variation. Serve with marinara sauce, ranch dressing, or spicy mayo for dipping.
